Its that day again...I told you it was gonna be a big week! Yes, today if Elvis were still alive he would have been pretty old.
What do you think he would have been doing these days?
We can only wonder.
So I went looking for some Elvis themed recipes and the one that kept coming up was the one that I posted last year for the King's birthday! Wanna have a look at that? Its great for your cholesterol!
So, I can't use that one again. I found some more, and more, and more. The man liked to eat some fine Southern goodness. Can't say that I blame him. I mean, if only there were a way to deep fry something and add nutritional value. Alas, it is not to be. Now anyway...maybe one of my science minded readers (do I have any???) can formulate something to make it so. That would be all kinds of awesome! I'm just saying. That would be a money maker! Keep that in mind.
Anyhow, the recipe I picked today is in fact deep fried. But its a vegetable, so that makes it better, right? Now, I have had these, and I can only imagine that Mr. Presley loved them...they are pretty amazing. (And now that I have a deep fryer...)
Deep Fried Pickles
Ingredients
1 1/2 cups cornmeal
3/4 cup all-purpose flour
2 tablespoon lemon pepper seasoning
2 teaspoon dried dill weed
1 1/2 teaspoon garlic powder
1 1/2 teaspoon salt
1/4 teaspoon ground red pepper
1 cup milk
2 eggs
1 (24-ounce) jar dill pickle spears, chilled
3 cups canola oil
Directions
In a shallow dish, combine cornmeal, flour, lemon pepper, dill weed, garlic, salt, and ground red pepper and mix well. In another shallow dish, whisk milk and eggs together.
Dip pickles into egg mixture, then place in cornmeal mixture and coat evenly on all sides. Place on wax paper lined cookie sheet.
Chill 20 minutes.
Meanwhile, in a large pot or deep fryer, heat oil until hot but not smoking. Add chilled pickles in batches to oil and fry 3 to 4 minutes, or until golden, turning once. Drain on paper towel-lined cookie sheet.
Enjoy with some ranch dressing! Divine =)

DeleteI don't think I've had anything deep fried that isn't typically deep fried. I know there are people that will deep fry pretty much anything though.

Oh no, no, no.. I can't do dill pickles out of the jar, on my burger or in salads, let alone deep fried. I thought you were going to post some peanut buttery n' banana-ish. :p And how old would he have been anyway???
